Method
- Combine cherries, sugar, lemon juice, and almond extract in a saucepan. Simmer for 5–7 minutes until thickened. Cool to room temperature.
- Using an electric mixer, combine mascarpone, powdered sugar, and vanilla extract. Beat until smooth and creamy.
- Whisk espresso and remaining 2 tbsp almond extract. Dip ladyfingers into the espresso, then into the cherry mixture. Layer half in a dish.
- Spoon half the mascarpone mixture over the ladyfingers. Repeat layering (ladyfingers with cherry, then mascarpone). Chill 2–4 hours.
- Sift cocoa powder over the top before serving. Refrigerate until ready to serve.
Notes
For best results, chill for 4+ hours to harmonize flavors.
Ladyfingers will soften but won't become soggy if dipped quickly.
