Ingredients
  

  • Cherries, pitted
  • 1/4 cup sugar
  • 2 tbsp lemon juice
  • 1/4 cup almond extract (halal substitute for Amaretto)
  • 1 cup espresso
  • 24 ladyfingers
  • 16 oz mascarpone
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp cocoa powder (unsweetened)

Method
 

  1. Combine cherries, sugar, lemon juice, and almond extract in a saucepan. Simmer for 5–7 minutes until thickened. Cool to room temperature.
  2. Using an electric mixer, combine mascarpone, powdered sugar, and vanilla extract. Beat until smooth and creamy.
  3. Whisk espresso and remaining 2 tbsp almond extract. Dip ladyfingers into the espresso, then into the cherry mixture. Layer half in a dish.
  4. Spoon half the mascarpone mixture over the ladyfingers. Repeat layering (ladyfingers with cherry, then mascarpone). Chill 2–4 hours.
  5. Sift cocoa powder over the top before serving. Refrigerate until ready to serve.

Notes

For best results, chill for 4+ hours to harmonize flavors.
Ladyfingers will soften but won't become soggy if dipped quickly.
Adjust sugar if using overly sweet cherries.
