  • 1 lb grilled chicken breast, cubed
  • 1 head romaine lettuce, chopped
  • 1 cucumber, chopped
  • 1 carrot, chopped
  • 1 green onion, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup croutons (optional)
  • 1/2 cup Caesar salad dressing
  • Salt and pepper to taste

Method
 

  1. Cook pasta according to package instructions
  2. Drain completely and let cool in a colander
  3. Chop grilled chicken breast into bite-sized chunks
  4. In a large bowl, add romaine lettuce, cucumber, carrot, and green onion
  5. Top with cherry tomatoes, cooked pasta, and grilled chicken
  6. Add Parmesan cheese and optional croutons for texture
  7. Drizzle Caesar dressing over the mixture
  8. Use tongs to evenly coat all components
  9. Adjust seasoning with salt and pepper

Notes

Shock cooked pasta in ice water for best texture
