Ingredients
  

  • 6 cups chopped lettuce (iceberg, romaine, or baby spinach)
  • 8 oz marinated chicken breast (halal option available)
  • 2 cups tomatoes (cherry or heirloom, halved if needed)
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar (or substitute with apple cider vinegar if needed)
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 cup crumbled feta cheese (halal or vegan alternative)

Method
 

  1. Chop lettuce into 1-inch pieces and layer in a large bowl.
  2. Arrange chicken slices in a single layer for even dressing coverage.
  3. Top with sliced tomatoes, cucumber, and red onion.
  4. Mix olive oil, vinegar, oregano, black pepper, and salt in a jar until emulsified.
  5. Drizzle dressing over the salad and crumble feta on top.
  6. Let marinated chicken rest for 10 minutes before serving to enhance flavor.
  7. Toss gently and serve immediately.

Notes

Use halal-certified marinated chicken or substitute with rotisserie chicken (no pork/ham);
For a vegan version, replace feta with plant-based cheese;
Add chickpeas for extra protein;
Adjust sweetness by reducing sugar in the dressing if available;
