- Preheat oven to 200°C (395°F)
- Roll dough on floured surface to 12×16 inches
- Cut 3-inch circles using cookie cutter
- Let dough rest at room temperature 30 minutes
- Mark center of each circle with finger
- Brush egg wash over all sides
- Fill center with 1 tbsp lemon curd
- Bake 18 minutes until golden, rotating trays halfway
- Cool slightly before dusting with icing sugar
