Ingredients
  

  • 1 batch Danish pastry dough (or 1 sheet ready-made puff pastry)
  • 1½ cups lemon curd (homemade or store-bought)
  • 1 large egg yolk + 1 splash water (for egg wash)

Method
 

  1. Preheat oven to 200°C (395°F)
  2. Roll dough on floured surface to 12×16 inches
  3. Cut 3-inch circles using cookie cutter
  4. Let dough rest at room temperature 30 minutes
  5. Mark center of each circle with finger
  6. Brush egg wash over all sides
  7. Fill center with 1 tbsp lemon curd
  8. Bake 18 minutes until golden, rotating trays halfway
  9. Cool slightly before dusting with icing sugar

Notes

Use store-bought puff pastry for 10-minute shortcut
Resting time prevents tough pastries
Add sugar immediately after baking for maximum shine
Store in airtight container, re-heat in 150°C (300°F) oven
