Ingredients
  

  • 4 skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Grilled tortillas (4 large)
  • 2 cups romaine lettuce
  • Caesar dressing (store-bought or homemade, non-alcoholic)
  • Optional: Grilled asparagus for serving

Method
 

  1. Combine chicken thighs with oil, lemon juice, garlic powder, oregano, salt, and pepper. Marinate at room temperature for 30 minutes, flipping once.
  2. Preheat indoor grill pan to 400°F (200°C). Grill chicken 7-8 minutes per side, rotating halfway for char marks.
  3. To assemble wraps: Warm tortillas on grill, spread Caesar dressing inside, layer romaine and grilled chicken. Fold edges tightly.

Notes

Use a meat thermometer for doneness: 165°F (74°C).
Add rosemary or basil to the marinade for regional variations.
Toast tortillas before adding dressing to prevent sogginess.
Substitute chicken breasts (cooking time reduces to 5-6 minutes per side). Ensure Caesar dressing is halal/non-alcoholic.
