  • 7 peaches, pitted and sliced
  • 1 ½ cups rolled or steel-cut oats
  • ½ cup hemp hearts (chia seeds or walnuts optional)
  • 2 tbsp ground flax (or 3 tbsp almond butter)
  • 3 tbsp brown sugar (use coconut sugar for keto)
  • 5 tbsp softened salted butter (or unsalted butter + ¼ tsp salt)
  • ½ tsp cinnamon (or ¼ tsp nutmeg + ¼ tsp vanilla extract)
  • 1 cup plain yogurt (optional for serving)
  • ½ cup fresh berries (optional for serving)

Method
 

  1. Layer peach slices in an 8x8-inch baking dish
  2. Blend oats, hemp hearts, flax, sugar, and cinnamon in a bowl
  3. Add butter cubes and mix with hands until crumbly
  4. Spread oat mixture evenly over drained peaches
  5. Bake at 350°F until golden brown (25-30 minutes)
  6. Let cool 5 minutes and serve with optional yogurt and berries

Notes

Chill baking dish in fridge overnight for optimal sweetness concentration
Use room temperature butter for better topping texture
Drain peach juice before adding topping to prevent over-wet mixture
