Ingredients
  

  • 1 pound ribeye or sirloin steak
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 small onion (about ½ cup, diced)
  • 1 green bell pepper (about ½ cup, diced)
  • 1 yellow bell pepper (about ½ cup, diced)
  • 8 slices provolone cheese
  • 8 mini slider buns (about 2 ounces each)

Method
 

  1. Heat oil in a 12-inch skillet over medium-high heat
  2. Add onion and bell peppers; cook 5-7 minutes until tender-crisp
  3. Push veggies to one side; add steak to the skillet
  4. Season steak with salt and pepper; cook 4-5 minutes until browned
  5. Add provolone cheese slices on top of steak
  6. Cover and cook 1-2 minutes until cheese melts
  7. Place steak mixture on bottoms of buns
  8. Top with cheese slices if desired and cover with buns

Notes

Provolone ensures best cheese adhesion; substitute with cheddar if needed
Omit bell peppers for simpler flavor
Brush buns with butter before toasting for extra flavor
