- Heat oil in a 12-inch skillet over medium-high heat
- Add onion and bell peppers; cook 5-7 minutes until tender-crisp
- Push veggies to one side; add steak to the skillet
- Season steak with salt and pepper; cook 4-5 minutes until browned
- Add provolone cheese slices on top of steak
- Cover and cook 1-2 minutes until cheese melts
- Place steak mixture on bottoms of buns
- Top with cheese slices if desired and cover with buns

Provolone ensures best cheese adhesion; substitute with cheddar if needed
