Ingredients
  

  • Medium Fresh Pineapple, 1 (720g) or 2 x 4oz cans
  • Jalapeños, 2 medium, halved and seeded for milder flavor
  • Apple Cider Vinegar or White Vinegar, 2 cups (200-240ml)
  • Granulated Sugar, 1 cup (180g) or 1½ cups if adjusting for sweetness
  • Fresh Ginger, 1 tbsp grated
  • Lemon Juice, 2 tbsp (30ml)

Method
 

  1. Chop pineapple into 1cm cubes and drain if using canned
  2. Halve jalapeños; remove seeds for children's version
  3. Grate ginger finely to maximize spice intensity
  4. Combine all ingredients in a 3L pot with 3cm depth of water
  5. Bring to a boil then simmer gently for 25 minutes, stirring frequently
  6. Boil sterilized jars in a water bath for 10 minutes before filling

Notes

Use 'Smooth Cayenne' pineapple hybrids for juicier results
Always stir with non-reactive utensils to avoid altering flavor
Store in airtight jars; candy remains crisp for up to 3 weeks
Adjust jalapeño quantity to control spice level
