Quick & Flavorful Ground Beef and Broccoli

Ingredients
  

  • Ground beef, 1 lb (450g)
  • Broccoli, 3 cups florets
  • Peanut oil, 1 tbsp
  • Yellow onion, 1, diced
  • Soy sauce, 3 tbsp
  • Brown sugar, 1 tbsp
  • Honey, 1 tbsp
  • Garlic, 2 cloves, minced
  • Ginger, 1 tsp, grated
  • Sesame oil, 1 tsp
  • Cornstarch, 1 tbsp
  • Cold water, 1 tbsp

Method
 

  1. Combine cornstarch and cold water in a container, shake until dissolved.
  2. Mix soy sauce, brown sugar, honey, garlic, ginger, and sesame oil in a bowl.
  3. Heat oil in a skillet; stir-fry broccoli 4 minutes until tender-crisp. Remove to a bowl.
  4. Cook ground beef on medium-high 6-8 minutes until done. Drain excess fat.
  5. Add onions, stir-fry 1 minute until softened.
  6. Pour sauce mixture into the skillet with beef and onions. Simmer 3 minutes until thickened.
  7. Return broccoli to the pan and toss to coat. Cook 2 minutes until heated through.

Notes

Drain 3/4 cup fat after browning beef to reduce calories.
Use pre-diced onions for time-saving.
Frozen broccoli works well if fresh is unavailable.
Substitute scallion for yellow onion for a milder flavor.
Replace peanut oil with safflower or olive oil.
